This morning I was craving some eggs. Not just the same ole boring eggs, but something filling and with a TON of flavor. I didn't really have much on hand, but then I remembered I had some frozen vegetables that I bought for a side with a lunch. I looked at the ingredients and thought, "would this taste good with eggs?" As most of my friends and family know, I dislike thinking; it hurts. So without a second thought I placed the ingredients in a skillet and started my day. And I must say they are the most amazing eggs I have ever tasted. My taste buds were over joyed and begging for more as I swallowed the bites. By the time my bowl was empty I was very full. Not only full from great ingredients but full of such an amazing wide variety of flavors. I hope you all enjoy this as much as I did...
What you need:
1- Skillet
2 tbs- Butter (I use country crock: it has 0 carbs)
1 cup- oriental veggies (3 carbs)
4 slices- Medium rare roast beef (deli lunch meat)
1/2 cup- liquid eggs (less than 2 carbs)
1 tsp- Garlic powder
Pinch of salt and pepper
First throw the butter, meat, and veggies into the skillet and thaw them out. Should only take 2 or 3 minutes. Sprinkle the garlic powder on top. You can add a little more butter before the eggs go in.
One they are thawed and the veggies have a little browning on them, go ahead and pour your eggs into the skillet.
Add salt and pepper for taste.
Prepare your eggs to your liking and enjoy!
